Rigatoni Stuffed with Ham

The stuffing:
8 ounces ham
1 onion
2 slices of bread
1 teaspoon garlic powder
1/2 cup romano cheese
1 teaspoon italian seasoning

1 pound rigatoni

1 jar tomato sauce

8 ounces mozzarella cheese, shredded.

Take the first six ingredients and grind them in a food processor

Boil the rigatoni until it is less than al dente. Drain it. Cool it. Put the stuffing in the rigatoni. This part is a pain in the ass but I watch TV while I do it and it seems to be soothing. It took me about 25 minutes to do it today.

Pour 1/3 of the sauce on the bottom of a 8 X 13 baking dish Put your little stuffed rigatoni in the dish until you get a layer. Pour 1/3 of the sauce. Top with 1/2 the shredded cheese. Repeat the rigatoni layering, saucing and cheesing.

Bake at 350 for 45 minutes until it is all bubbly and yummy. It is supposed to make eight servings but yohboh really loves this and it lasts two days.

Mangosteen

Durian

We ate durian in Singapore. Durian tastes like if rotten coleslaw was made into a warm egg custard.

A recipe without a picture again

Sweet Potato Casserole

Three pounds of sweet potatoes
One stick of butter
1/2 cup of heavy cream
1 tablespoon cinnamon
10 gratings of fresh nutmeg
1/2 cup brown sugar
1/4 cup dark rum

For the topping:
Marshmallows
Pralines

Bake the sweet potatoes in an oven until they are mushy. I do this for about an hour at 350.

After the potatoes are cool enough to touch barely, slip off the skins and make sure you get all the syrupy stuff that comes with them. Mash them with all the other ingredients. You can melt the butter, but the potatoes are so hot that the butter will melt.

Put in a 9X13 pan. It does not need greasing. Add the topping. I did 1/2 marshmallows and 1/2 pecans.

Bake 350 until the marshmallows are puffy and golden.

It is interesting to see who goes for the marshmallow (in my mind, the kiddie side) as opposed to the praline side (more adult).

Recipe without a picture

So I am all about veggies lately. I like to make all my veggies with bacon. Here is my default recipe:

Veggies by minjenah
Two strips of bacon
1/4 cup of onion
1 pound of veggies (like kale)

Fry the onion and bacon together until the onion is soft and the kitchen smells like bacon. Add the veggies and three ice cubes. Cover tightly for ten minutes. Season to taste. YUM

Pizza Night

So yohboh asked for pizza tonight. And I complied. It costs less than a dollar to make two pizza dough rounds. I created a new pizza:

Goat Cheese and Caramelized onion pizza
This is a goat cheese and caramelized onion pizza with garlic oil and cracked black pepper.

I could give you a recipe but I just did.

Yummy! The pizza was so good.

Spinach Dip

So yohboh had some football to watch. You cannot watch football without something to nibble on. So I made this:

Spinach Dip
16 ounces cream cheese, softened
10 ounces frozen spinach, defrosted and all excess moisture squeezed out
10 ounces chopped canned artichokes drained
3 cloves of garlic, minced
1/2 cup mayonnaise
1 cup Parmesan cheese

Preheat oven to 350
Combine the first five ingredients. Pour into an oven safe dish. Top with cheese. Bake for 30 minutes. Serve with tortilla chips.

Fried Rice

Fried Rice is a leftover recipe. It is a great use for those half chopped onions and bits of meat. This was our dinner.

First I chopped up some leftover crudite and added half an onion.

Then I took some SPAM (I like Spam, don't be hating) and chopped it into cubes..
