Carbonara

This is what we had for dinner tonight. It is Spaghetti Carbonana. It is bacon, eggs, cheese, garlic and pasta. Otherwise known as Cholesterolville.

Spaghetti Carbonara

This is what normally makes four portions but Yohboh is a big eater. And the toddler liked it a lot as well.

One pound of pasta, preferably spaghetti

olive oil
4 ounces pancetta cubes
1/2 onion cubed the same size as the pancetta
1 T crushed Garlic

Four eggs
1 cup combination grated parmesan and romano cheese (If you only have one or the other that is fine but I do like the combination)
Freshly ground black pepper


Boil the water for pasta, when the water starts boiling put the pasta in and start making the sauce.

In a pan large enough to fit one pound of cooked pasta, put some olive oil (one turn of the pan) on medium high heat. Add the pancetta, onion and garlic. Cook until it smells really good (normally the eight minutes it takes to make the pasta)

In bowl large enough to fit a pound of pasta and the pancetta mixture, take your four eggs, 1 cup of cheese and pepper and beat them.

When the pasta is done, reserve a cup of the pasta water. Drain the pasta. Immediately pour into the pan with the porcine products. Toss to coat. Immediately add the pasta to the beaten egg mixture. Toss to coat. If it seems a bit dry add the reserved pasta water until the pasta gets silky and shiny like this:

Carbonara

Serve immediately. This is something that tastes best freshly made.
