Spinach Dip

So yohboh had some football to watch. You cannot watch football without something to nibble on. So I made this:

spinach dip

Spinach Dip
16 ounces cream cheese, softened
10 ounces frozen spinach, defrosted and all excess moisture squeezed out
10 ounces chopped canned artichokes drained
3 cloves of garlic, minced
1/2 cup mayonnaise
1 cup Parmesan cheese

Preheat oven to 350
Combine the first five ingredients. Pour into an oven safe dish. Top with cheese. Bake for 30 minutes. Serve with tortilla chips.

Suffering succotash

I made succotash.

I have never made succotash before. For such a great word to say, it's a boring recipe. Corn and lima beans. Sounds better as SUCCOTASH!

Wouldn't that be a great porn star name? Suck O Tash.

Fried Rice

Fried Rice is a leftover recipe. It is a great use for those half chopped onions and bits of meat. This was our dinner.

First I chopped up some leftover crudite and added half an onion.
Fried Rice

Then I took some SPAM (I like Spam, don't be hating) and chopped it into cubes..
Fried Rice

Then I defrosted some shrimp.

Then I chopped up some kimchi.

Cottage Pie

This is one of DBW's favorite things I make.
Cottage Pie

Cottage Pie

2 pounds of ground beef
1 onion, chopped
1 bell pepper, chopped
2 cloves of garlic, minced
1 16 ounce bag frozen vegetables mix, defrosted and drained(your choice)
3/4 cup chicken broth
2 tablespoons Wondra flour
3 cups leftover mashed potatoes
1 cup shredded cheese (your choice)

Brown the ground beef in a large skillet. Drain the grease. Add the onion, pepper, and garlic and let cook down until brown, about ten minutes. Season liberally with salt and pepper. Add the veggies and heat through. Add the chicken broth and Wondra flour (Wondra flour is great for sauce making. It is very fine and dissolves very quickly.) It should not be soupy but there should be a little bit of liquid.

Put all the contents of the skillet into a large casserole. Add a layer of mashed potatoes. (I do not recommend making mashed potatoes for this dish but it is an excellent use for leftover mash.)Add the cheese (I used Irish cheddar). Bake at 350 for about an hour.

Makes a lot.

Hard Cider

Have you ever noticed that hard cider has vaguely pornographic names?

For example:
Woodchuck Draft Cider
Hornsby Hard Cider
And my personal favorite:
Hard Core Cider

Or maybe I am a gutter minded person?

So I was googling to see if there were any stores in my area that had the bento boxes I like so much. The local Asian markets only have Mr. Bento bentos. I do not want that. I want cute adorable bento boxes that make me coo they are so cute. AND I FOUND SOME!
