Bento-ish

So Kia told me about Ichiban Kan. It is a place for cheap bentos and really cute bento accessories like:

What is this you ask? This is a hard boiled egg shaper. You put the egg in the center and it comes out looking like:

It says "My name is Rinda, I love the white cake and the sweet cherries. Yummy yummy."
For some reason, I think the bunny's name is Linda.

That is mushrooms, mashed potatoes and broccoli. I chopped the broccoli fine so that the toddler would like it.

So this evening, I told yohboh that I had gotten him a surprise, and that it was in the fridge. He asked if it was beer. I replied it was better than beer. And he was greeted to this:

Chicken and Eggplant Curry

I saw this post and it got me thinking about curry.
So I made some with chicken and eggplant and peas.

Apple Pie

I am not a pie person. I do not like making crusts. I am a one bowl recipe person. Pies require at least two bowls. One for crust and one for filling. I made this apple pie today because there was a rotten Honeycrisp from our apple adventure and it made quite a few mushy. So I cut off the mushy parts and make this:

I did not really use a recipe. I used a commercially prepared crust because sometimes I don't want to wash my food processor. For the filling it was apples, cinnamon, vanilla sugar, 10 gratings of nutmeg, lemon juice, brandy and enough flour to make it pasty.

I baked for one hour at 350. This is how much yohboh and I had, before dinner.

Weird Combination of leftovers

This is pasta of tomatoes, basil and garlic tossed with braised short ribs. It was successful.

I made it from this recipe here. It is truly delicious. It is not too sweet, pleasantly coconutty and a great breakfast.

Monkey Munch

Have you heard of Monkey Munch? It is a favorite of Jon and Kate plus 8. The original recipe makes NINE cups, but since we are a family of three not ten I made two cups.

Ingredients

* 2 cups Crispix
* 1/4 cup chocolate chips
* 2T peanut butter
* 2T butter
* 1/4 cup powdered sugar


Directions

1. Put cereal in large bowl. Melt chocolate chips, peanut butter, and butter.
2. Pour over Crispix cereal, put into a large plastic bag with powdered sugar and shake well to coat.
3. Spread mixture evenly on wax paper and allow to cool.

It is very good but I don't think I will make it again. It is junk food.

Our Dinner

Dinner
Alton Brown's meatloaf, broccoli barely blanched and a twice baked potato.

Twice Baked Potatoes
6 potatoes
Olive Oil
Salt

Four ounces of cream cheese softened
Four ounces of butter softened
Six slices crisp cooked bacon, crumbled
Two scallions, finely chopped
Eight ounces cheddar cheese
Salt
Pepper

Six slices American cheese product (the ones wrapped in plastic)sliced in half.

Preheat oven to 375. Take your six potatoes and poke them. Rub olive oil on them and salt. (I have also been known to use bacon grease on the potato skins) Bake them until a knife gives easily.

Pull them out while piping hot. Slice each potato in half while they are hot (I use an oven mitt and a sharp knife. Scoop out the flesh of the potato. (If you start with the first one you split, they should be cool enough to handle, if not use the oven mitt) Mash the flesh of the potato with the next seven ingredients. It will be creamy like mashed potatoes. Put this delicious bacony oniony delight in the skins of the potatoes. Put the half cheese slice on top. Put back in the oven and bake until the fake cheese slice is golden brown and delicious.

Makes 12 twice baked potatoes.

My first bento

So I have been reading my friend Kia's bento blog and I wanted to make these ADORABLE things myself. So I did.

Braised Short Ribs

So this is the new recipe. It is from this month's Bon Appetit but being Minjenah, I could not follow it directly.

Things I did differently,

1) I browned all the short ribs to get a good sear on them.
2) I cooked the onion and garlic in the beef fat after I browned the beef.
3) I omitted the mushrooms because I did not have any.

This recipe is very very fatty. What I am doing is actually putting this in the fridge tonight so the fat layer can be scooped out in the morning. Besides, braised dishes always taste better the next day.

Culinary Quandary

So it's not like we haven't been eating here at Beef and Chocolate. It's just that, well, I have blogged about it all before. I mean, I made pizza, gazpacho and we had a lasagna night. But I made an apple crumble which is essentially this cobbler but with apples and oats in the crust.

I did try a new recipe. But I changed it a bit, but not for the better. I used CRISPIX cereal for the crust and buttermilk.

So now I vow to come up with a new recipe this week.

Dessert Pizza

Okay, so I totally made this recipe up. In my head, I was looking for something like a crostada with a yeast dough base, because I had made pizza dough and I wanted to have a dessert.

Blueberry Pizza

One 6 ounce ball of pizza dough rolled wafer thin

2 Tablespoons Melted butter


Four ounces cream cheese, softened
2 tablespoons sugar
1 teaspoon vanilla

1 cup blueberries

Pearl Sugar ( you could totally use regular sugar, but I had pearl sugar and it looks pretty)

Brush one side of the whole pizza dough with 1 tablespoon of melted butter

Combine the next three ingredients and whip until fluffy( I did this with a fork). Spread the cream cheese mixture in a circle one inch smaller than the dough.

Put blueberries on top of the cream cheese mixture.

Fold the dough over the blueberry mixture and pinch closed so that it makes a little basket of dough to hold the berries.

Brush the outside of the dough with the remaining melted butter. Sprinkle pearl sugar on the edges.

Bake in a 425 degree oven until golden brown and delicious. It took about 25 minutes.

Wait a painful ten minutes for the pizza to set and eat.

Three garden tomatoes
One fat bunch of basil leaves
One 8 ounce ball of fresh mozzarella
Olive oil
Salt
Pepper
White Balsamic vinegar

Carbonara

This is what we had for dinner tonight. It is Spaghetti Carbonana. It is bacon, eggs, cheese, garlic and pasta. Otherwise known as Cholesterolville.

Spaghetti Carbonara

This is what normally makes four portions but Yohboh is a big eater. And the toddler liked it a lot as well.

One pound of pasta, preferably spaghetti

olive oil
4 ounces pancetta cubes
1/2 onion cubed the same size as the pancetta
1 T crushed Garlic

Four eggs
1 cup combination grated parmesan and romano cheese (If you only have one or the other that is fine but I do like the combination)
Freshly ground black pepper


Boil the water for pasta, when the water starts boiling put the pasta in and start making the sauce.

In a pan large enough to fit one pound of cooked pasta, put some olive oil (one turn of the pan) on medium high heat. Add the pancetta, onion and garlic. Cook until it smells really good (normally the eight minutes it takes to make the pasta)

In bowl large enough to fit a pound of pasta and the pancetta mixture, take your four eggs, 1 cup of cheese and pepper and beat them.

When the pasta is done, reserve a cup of the pasta water. Drain the pasta. Immediately pour into the pan with the porcine products. Toss to coat. Immediately add the pasta to the beaten egg mixture. Toss to coat. If it seems a bit dry add the reserved pasta water until the pasta gets silky and shiny like this:

Serve immediately. This is something that tastes best freshly made.

Warm Tortilla Chips

Do you know the best thing about a Mexican joint? The warm tortilla chips and salsa that arrive with your drinks. It is one of the few restaurant that we still frequent because there is no replicating that warm tortilla chip experience. Or UNTIL TODAY!

12 corn tortillas
Oil
Salt

Heat oil to 350.

Cut the tortillas into quarters.

Deep Fry tortillas in hot oil until brown and puffy.

Take out of the oil and salt immediately.

Eat while still warm.

Catfish

I am not a fan of catfish. A friend of yohboh's has a pond full of catfish. Yohboh went over there and brought home three and some catfish roe.

I have to tell you the catfish and the roe were stomach turning. They were very bloody and slimy. I baked the catfish and they were divine. Full on meaty and tender and sweet. Reminded me of moi.

The roe was very bloody and I rinsed it many times. Yohboh fried it in browned butter. It reminded me of cheese with little bubbles in it. Lola, our dog liked it a lot. But she is a bit of a diary whore.
