2 pounds of ground beef 1 onion, chopped 1 bell pepper, chopped 2 cloves of garlic, minced 1 16 ounce bag frozen vegetables mix, defrosted and drained(your choice) 3/4 cup chicken broth 2 tablespoons Wondra flour 3 cups leftover mashed potatoes 1 cup shredded cheese (your choice)
Brown the ground beef in a large skillet. Drain the grease. Add the onion, pepper, and garlic and let cook down until brown, about ten minutes. Season liberally with salt and pepper. Add the veggies and heat through. Add the chicken broth and Wondra flour (Wondra flour is great for sauce making. It is very fine and dissolves very quickly.) It should not be soupy but there should be a little bit of liquid.
Put all the contents of the skillet into a large casserole. Add a layer of mashed potatoes. (I do not recommend making mashed potatoes for this dish but it is an excellent use for leftover mash.)Add the cheese (I used Irish cheddar). Bake at 350 for about an hour.
