Aqua Ghetto Margarita

Aqua Margarita

I wanted to make margaritas but we were out of triple sec, and margarita mix. So I improvised with what we had:

Aqua Ghetto Margarita

1/2 can of limeade mix
3 cups ice
1/4 cup blue curacao
1/2 cup tequila

Blenderize and drink with a straw.

Also, I like to sprinkle salt into the drink as opposed to rimming it. (I wrote rimming!)

Beer of the Hello Kitty variety

I always thought Hello Kitty was more of a wino.

Roasted Corn

I think I am either going to roast all my veggies or cook them in bacon. Maybe both.

One perfect crust

So tonight we had homemade pizza. And yohboh and I agree that this was the perfect crust. As yohboh put it, my best work yet. Crisp to the point of almost crunchy, yielding to a soft and pliable center. The problem is I did this dough by feel. I used a cup and a half of water, seven handfuls of bread flour , two iced tea spoons of yeast, three pinches of salt and two glugs of olive oil. So I probably will never replicate it. But tonight, PERFECT CRUST.

Mushrooms that taste like canned

Yohboh told me he liked the way I did mushrooms because they tasted like the canned ones. He meant it as a compliment.

Fresh Mushrooms that taste like canned
16 ounces mushrooms
Olive oil

Quarter the big mushrooms and halve the smaller ones.

Do one turn of the pan of olive oil and a knob of butter that is roughly a cube. When the butter melts, add the mushrooms.

Salt and Pepper

Cover the pan until it is cooked. About ten minutes.

Green Giant EWWWW

So I got this box of frozen veggies

Healthy Vision

for free.

It was disgusting. We are used to eating fresh veggies and cooking them ourselves. So this Rosemary Butter sauce on these veggies did not taste like butter or rosemary. Also, the carrots had the texture of styrofoam.

This was out dinner:

I made this up

I don't like leftovers. I like reinventions of previous meals.

Yummy Pasta

This is farfalle pasta with ricotta, ham, Italian cheeses, and tomato sauce with fresh basil and parsley.

It was good.

Pot Roast Burrito

Pot roast is wonderful for the leftovers. I can make beef stew, or cottage pie. But they are really winter foods. No one wants so much heavy food when it is spring. So I had inspiration kick me in the head and I made:

A frozen meal

Sometimes, I don't feel like cooking. I got a coupon for a Kashi frozen meal so I fed it to the toddler. It was Lemongrass chicken with organic quinoa. By the way, quinoa is pronounced KEEN WAH. I love when fancy people pronounce it wrong. I never correct them though, because fancy people never should be corrected. It was okay but I hate lemongrass.

There was also a fuji apple. Fuji apples are the only ones I eat.

Ham and a rant

I got a cheap ham from Publix. I read a lot of recipes on how to glaze ham. They suggested ingredients like mango chutney, gingersnaps and orange marmalade.

I went with the basics:
Dijon mustard and brown sugar. It was also what I had on hand.

I just slathered on Dijon mustard on the outside and then put a thick layer of brown sugar. I let it sit for a while so that there was a pool of mustardy syrup on the bottom, which I used as a basting liquid when I baked this for about 75 minutes at 300F. It was good.

Don't you hate it when you read a recipe and it has this one exotic ingredient that you don't know? And you spend all this time looking for? Because you have no idea if it is the key to the most delicious thing ever? And then you bother to look for it and then next thing you know you have a bottle of fenugreek that you used once and have shoved to the back of the spice cabinet because the recipe was not that great?

I love starches. I really like a meal with starches. Like these home fries:
Skillet Taters

Yohboh's favorite food is beef. We had a LOT of it tonight:

TWO raw standing rib roasts.

A cooked one

It was beefy.

I have a beef coma!

Grilled Cheese

In honor of grilled cheese month, I made this:
Grilled Cheese.

That is a grilled cheese sandwich with onions and bacon.

Yohboh loved it.

The Muffin Rumble

Are you ready?

In this corner:
Contestant Number One
Betty Crocker Muffins

In this corner:
Contestant Number Two
Home Made Muffins

The challengers met head to head:
You are going down Betty!
Homemade is No made!

Keep it clean, fellas!

Contestant one:
Look Good
Looked okay and the taste was bland. The cinnamon tastes a bit fake.

Contestant number two:
Look Better
Looked better and had a better flavor. Not as sweet, but pleasantly spicy.

We had a clear winner:
Look Better, Taste Better
Homemade muffins. The only thing that was better in Betty's Muffins was the streusel. And that can easily be rectified.

The remaining four give a shout out to the comrade at arms that gave his all for the greater good.

A homemade Choco Taco. Maybe someday I will make some...

So I love obento lunches. When my child is old enough, she is getting eggs in the shape of Hello Kitty. But for now, I content myself with this:
That is a mustard face on the meatloaf for yohboh's lunch.
