Low Country Boil

This is delicious! It is shrimp, corn, potatoes, sausage and artichokes. There is not a recipe. You just do that in a vat of boiling water with a lot of salt and Old Bay.

Bahn Mi

I will admit I have never eaten a "real" bahn mi. I read a lot of online recipes and adapted to what I had. This is my bahn mi:
Bahn Mi
Going by the layers: Bread, Chili Garlic Mayonnaise, pickled carrots, pickled radish, sliced cucumber, ham, leftover pork chop, cilantro, Chili Garlic Mayonnaise, Bread.

This is one of two sandwiches that do not need cheese. The other is peanut butter and jelly.

Carrot Cake

So I made this cake for Marty, since today is his birthday. It is a carrot cake, because it is my favorite cake to make. Ava liked to eat the leftover shredded carrots. I did not use Deb's frosting, though. I do one stick butter, one block cream cheese, one box powdered sugar and one tablespoon vanilla. Also, I do it in three layers.

Chicken Fingers and Hand Cut Fries

Minjenah's Chicken fingers

10 chicken tenderloins
2 cups salt water

1.5 cups flour
1 T salt
1/2 T pepper
1 t cayenne pepper
1/4 t baking powder

Soak the tenderloins in salt water over night.

Combine the next five ingredients.

Drain the chicken and shake off excess water. Dredge in the seasoned flour mixture.

Deep fry at 375 for six minutes or until golden brown.

Yohboh likes it with honey mustard, I like it with Chili Garlic Mayonnaise.

Macaroni and Cheese

Yohboh said that this was KC-esque. A huge compliment.

Mac and Cheese

What I did (for no one else but me)
1 can evaporated milk
2 T butter
1 pound Nice and Cheesy cut into cubes (This is the Kroger brand Velveeta)
2 T grainy mustard
1 pound cooked pasta
8 ounces blue cheese, crumbled
4 ounces sharp cheddar, shredded


Melt the first three ingredients in a large pot. Add the mustard. Add the pasta and toss it. Add the blue cheese. Pour into a casserole dish and add the cheddar. Bake at 350 for 45 minutes.

I can't stop eating this!

Yohboh's fries

Yohboh is our resident fryer. This is because we got a fryer for a wedding present and he is the only one who has ever touched it. I mean, I put it up sometimes but all the frying in the fryer is a yohboh thing.

Yohboh makes the best hand cut fries.

Here are some photos and comments by yohboh.

First you cut the fries up. (Count on one potato per person-minjenah)

Rinse the potatoes to get the starch off.

Yohboh puts them in the microwave to make sure they are completely dry. Not long, may be two minutes.

GIVEAWAY to Atlanta Readers!

I was recently contacted by McDonald's to do a taste test and a giveaway on their coffee. As you know, I am not a big fast food eater (although I LOVE it) so it took me a while to pull through a drive through at McD's. I finally got around to tasting a mocha on ice:

It was pretty good. Milky and not too sweet. In the future, I would have asked for no whipped cream.

So I have five packets of coupons to giveaway. Each packet has five coupons for a free small or medium hot or cold McDonald's coffee. They expire on 5/31/2010. My favorite salad

My favorite salad is caprese. It is best with garden tomatoes but I made do with some hydroponically grown ones.

Have you ever eaten something exactly when you want it? It is so satisfying. Just now, I had an everything bagel with smoked salmon, cream cheese, red onions, capers and cracked black pepper.

Corn and Lentil Salad

I made this up. I really like vinegar. I like that mouth puckering sharpness. This is a good salad with grilled meats.

Corn and Lentil Salad

4 ears of cooked corn scraped from the cob
2 cups cooked lentils
1/2 large purple onion
30 leaves of basil (no I did not count, this was a guesstimate) chiffonade
Pesto Vinaigrette

Combine in a large bowl and let the flavors meld for about an hour.

My favorite summer pasta

Did you know in the Deep South there is six days of spring and then BOOM summer? Well it is feeling summer like lately and so I made this:
Summer Pasta

It is chopped tomatoes that I salt and then they get all juicy. I will also add garlic, basil, olive oil and pepper. I toss with fresh pasta and add Parmesan cheese. It is best with summer tomatoes from your own garden.

The best picnic food ever is kim bop.

It is rice, beef and pickled vegetables rolled in seaweed. My mother made us a large batch and put it in a picnic bento for us to eat at the Braves game. The little hand belongs to the toddler.
