Meatloaf Sandwiches

We had meatloaf last night. Meatloaf is one of those things that I did not make until I was married because I AM KOREAN and my mother never made it for me. The only meatloaf I had ever tasted was the school lunch meatloaf and it smelled like tuna. So I use Alton Brown's recipe and tweak.

This is what I had for dinner:

Spaghetti

So I make spaghetti every other week or so. Lately, every time I make spaghetti we have guests.

I really did not know how to make spaghetti until I went to college. My mother is an excellent Korean cook but when it comes to American food, she is a bit confused. But anyway, this is doctored sauce with ground meat, zucchini, mushrooms, onions, peppers, fresh oregano, tomato paste and a little sugar.

I do not have a recipe. It is what I have on hand. Sometimes, it is ground turkey, sausage or veal.

So did you know that I have a sweet mom who makes her own kimchi? Today, she brought me over some cucumber kimchi. I made bahn mis with them. My mother would be upset about that but they were SO GOOD!

So tonight, we had blueberry pancakes with bacon, vanilla scented strawberries and marinated tomatoes. It was really good!

Yohboh loves sunflower seeds.

Zucchini Pancakes

Gardening is fun. Right now we harvested our first zucchini. I made these:



Zucchini Pancakes

One pound zucchini coarsely shredded
2 eggs
1/2 cup sharp cheddar cheese
1/4 cup flour
Salt
Pepper

Combine all the ingredients and fry in oil.

I served them with marinara sauce.

Yohboh liked this, even if it was vegetarian.

But then again, yohboh and I were at a barbecue where there was 30 pounds of meat yesterday and yohboh did his part to consume. His body needed a bit of green.

A sprinkle of salt

It is amazing to me what a spinkling of salt can do. For instance if you eat this ice cream:


it is really good but if you sprinkle a little kosher salt on top it is SUBLIME!
