Watermelon Feta Salad

This is one of those things that when you read it, you think, "EWWW". Really it is weirdly delicious-- salty, sweet, crisp and full of liquid. Perfect for summer.

Watermelon Feta Salad

1/2 onion, sliced into thin half moons
juice of two limes

8 ounces of feta, cubed
1 bunch of parsley leaves, roughly chopped
2 pounds of cubed watermelon

Salt
Pepper

In the bowl you intend to serve them salad, put the onions and lime juice in the bowl. Let them marinate while you chop the rest of the stuff. Add the next three ingredients and season with salt and pepper to taste.

Toss and serve.

Eggplant Gratin

For those of you who do not know me in the real world, I am currently on a low carb diet. So when I made yohboh the potato gratin, I had to make something for me:

Eggplant Gratin

1 1 pound eggplant (garden grown), sliced in 1/4 inch slices

1/2 cup ricotta cheese
1 egg
salt
pepper

1 cup marinara sauce

Parmesan Cheese


METHOD
Preheat the oven to 400

Fry the eggplant in olive oil until mushy and light brown.

Combine the ricotta, egg, salt and pepper in a bowl.

Layer in a 8 x 8 pan the eggplant, marinara, then ricotta then eggplant and marinara.

Top with parmesan cheese and bake for 40 minutes.

THIS IS LOW CARB and YUMMY!

Potato gratin

We have potatoes that we grew so Yohboh asked for this:


I read a couple of recipes and made it up as I went along:

Potato Gratin

1 cup of milk
1/2 cup heavy cream
2 cloves of garlic, minced
10 gratings of nutmeg

2 pounds of potatoes sliced wafer thin (I used a knife--I don't need no stinking mandolin)
Salt
Pepper

Parmesan cheese

Preheat oven at 400.

Put the milk, cream, garlic and nutmeg in a small pot and let it come to a simmer.

Put the first layer of potatoes in a greased 8 x 8 pan. Season liberally with salt and pepper. Add a thin layer of cheese. Pour some of the hot milk mixture over the potatoes.

Repeat the previous paragraph until you run out of potatoes. Pour on the rest of the milk. Then put another fnal layer of cheese.

Put in the oven and let bake for about 45 minutes to an hour.

Yohboh really liked this.

Lebanese Food

I think the best food that is made is made by a grandmother. Grandma food has comforted multiple generations.

I think that any famous chef when asked what he or she would like to eat, would ask to sit at his grandmother's table and happily eat what was put in front of them.

I was at a birthday party for a three year old and his grandmother made Lebanese food. I happily devoured. Here are the pictures.

The Sauce

So I got yohboh the new Makers Mark 46 and Makers Mark to do a comparison and contrast.

I think they both smelled the same but the 46 had more of a peppery note. Yohboh actually preferred the Makers Mark.

Slaw

Sometimes I food blog just so how I remember how I made something to remember later.
For example:

Cole Slaw

1/2 onion sliced wafer thin into half moons
Juice of 2 limes

1 bag shredded cole slaw mix (yes I know I have pooh poohed bagged stuff but it was on sale and I had a coupon)
2 T kosher salt

2T cider vinegar
1T sugar
1/2 cup mayonnaise

Put the onion and lime juice in the bottom of a big bowl.

Put the slaw stuff in a colander and add the salt. Toss to coat.

Ignore both things for 30 minutes. The slaw mix should be wilted and quite a bit of water will have seeped out.

Combine the vinegar, sugar and mayonnaise with the onion lime mixure. Put the wilted slaw mix on top.

Right before serving, toss to coat. Season with salt and pepper.

What I really likes about this slaw was that it was not soggy. I dislike soggy slaw.
