What to do with garden tomatoes Part Six

I make this every summer. It is so much better with a garden tomato.

Gazpacho

3 baseball sized garden ripe tomatoes
2 garden cucumbers
1 onion
1 bell pepper
2 cloves garlic
1 tablespoon soy sauce
1/4 cup red wine vinegar

Put all this stuff in a Vitamix (my new blender which is the greatest thing that blends--thanks Mom!) and puree that for about 45 seconds.


When serving, I like a little hot sauce and a drizzle of olive oil.
