What to do with the garden tomatoes part ten

Garden Chili

2 T olive oil
2 onions chopped
12 banana peppers chopped
10 cloves of garlic smashed

50 ripe plum tomatoes
1 12 ounce can of beer
2 6 ounce cans tomato paste

1/2 cup chili powder
1/4 cup cumin
3 T oregano

15 ripe tomatoes, roughly chopped
3 pounds of ground beef, well browned and drained
2 15 ounce cans of pinto beans

Saute the onion, peppers and garlic until it is well browned in your largest pot.

Take half the plum tomatoes, half the beer and one can of tomato paste and puree in a blender. Pour into the pot. Repeat and pour in the pot. Let it simmer until it is reduced by half. This took about two hours for me.

Add the seasonings and salt. I cannot tell you how much salt because what tastes right to me may not taste right to you.

Add the fresh tomatoes, beef and beans.

Makes an enormous amount that I froze most of it.
