Birthday Cheesecake

Birthday Cheesecake
1 graham cracker crust

2 eight ounce blocks of cream cheese, at room temperature
1/3 cup sugar
2 T of honey
3 eggs
1 T vanilla

melted apricot preserves

Preheat the oven to 350.

Put the graham cracker crust in the oven while it is preheating.

While the graham cracker crust is toasting, mix the next five ingredients. If your cream cheese is warm, this should only a few minutes.

Pull the crust out of the oven and pour the cream cheese filling into the toasty crust. Put it back in the oven for about 30 minutes.

Top with fresh strawberries. To keep the berries fresh and glossy brush on some melted apricot preserves.

Eat on someone's birthday.
