Noodle Bowl

I think as a parent you must have go to meals when you are exhausted and the temptation of take out calls. Noodle bowls are one of them for us. You take little bits of protein, veggies, frozen dumplings and chicken broth. These are rice noodles but honestly, any noodle will do. The red stuff is kimchi that my mom made.

I also make this kind of soup when it's time to 1) use up bits and pieces of leftovers in the fridge or 2) no time to really cook. I always have homemade chicken stock in the freezer (right now I have homemade chicken pho too! It turned out well!) because I'm too cheap to throw out bones and skin when I'm working with chicken. Sometimes I'll use the homemade fish broth I have too. Hub and I love soups and they're fast,healthy and easy if you have the right stuff in your pantry/fridge!
