Company Soup

I made baked potato soup. I made it and people came to visit. 001

For the soup:
1 T bacon grease
1 onion, chopped
2 T garlic
5 baked potatoes, mashed with a fork
2 32 ounce cartons of chicken broth

For the garnishes
2 chopped scallions
Shredded Cheddar Cheese
Chopped crispy cooked bacon
Sour Cream

Saute the onions and garlic in the bacon  grease until the onions are translucent.  Add the potatoes and broth.  Simmer until the soup is thickened.  Serve with the garnishes you like.

Very filling.

That really looks looks good and not too fatty (if you don't go overboard w/the garnishes). I can't wait to try this!
