Chicken Pot Pie

The first time I had chicken pot pie was in college and it was not good.  It was one of those frozen 68 cent dinners that had enough sodium for three days.

So I made this one from scratch.

It has leftover roast chicken, sauteed carrots, onions, garlic, celery and frozen peas.  The sauce is homemade chicken stock, made from the roast chicken carcasses, thickened with Wondra flour and with a bit of cream.

The topping is White Lily biscuits from the back of the bag recipe from the self rising flour.

I baked it at 400 without the topping until it was bubbly.  Then I put the biscuits on top and bumped up the temp by 50 degrees. And baked about 25 minutes until it looked like this.

It was really really good.  Kidlet loved it.  Chuy loved it.  My husband loved it.

I am planning on always roasting two chickens so I can make this regularly.

And I am thinking that shepherd's pie would be really amazing with a biscuit topping.

Easy Lunch

I really like pastas where the sauce is made by the time the pasta is cooked.

I put eight ounces of rotelle on to cook for about ten minutes.

This is
2T butter
2T Boursin
1 clove crushed garlic
1 cup chopped ham

1 cup frozen peas

I put the first five ingredients in the serving bowl and put the frozen peas in the water the pasta is boiling for one minute.  I reserved a coffee cup's worth of the pasta cooking water.  I drained the pasta and poured the hot pasta and peas over the butter cheesy goodness.

Then I topped with parmesan and more pepper.

This took 12 minutes to make and was lunch for two adults and one toddler.

Kansas City Steak

A few months ago, I won a gift certificate for Kansas City Steaks.  Yohboh was delighted by this and got four bone in rib eyes.  They were very rich.

This is the last one that he got to eat for his birthday.  It has the same amount of fat as four and a half sticks of butter.

Empty Fridge

My friend N regularly teases me that she can determine my emotional state by how full my fridge is.  If I am unhappy, it is bare.

But my idea of an empty fridge is a lot different than most:


This is what it looked like when I came back from a two week vacation.  The milk was left by our friend who house sat.

But seeing the back wall of the fridge?

Just does not happen.
