This year, we spent Thanksgiving in St. Thomas.


An interesting thing is that when you eat turkey and all the trimmings in 86 degree weather you get very hot.  It is a heavy meal to be eaten in a chilly time of the year.  How to rectify that?

Eat it in the pool.  :)

Cranberry Apple Casserole

This is a re-post since many people asked me for this recipe over the weekend. 

This recipe came from my late grandmother in law. I doubled it here. I love this because it is like a dessert in the middle of a meal.


Cranberry Apple Casserole
12 ounce bag of cranberries
3 granny smith apples, chopped into cranberry sized pieces
1 cup of white sugar

1 stick of butter melted
1/2 cup brown sugar
1/3 cup of flour
1 cup of rolled oats
1/2 cup chopped pecans

Preheat the oven at 350. Combine the first three ingredients in a buttered casserole.

Combine the next five ingredients and put on top of the cranberry mixture. Bake for about 45 minutes until it is bubbly and the topping is brown.

Can be served at room temperature.

Company Soup

I made baked potato soup. I made it and people came to visit. 001

For the soup:
1 T bacon grease
1 onion, chopped
2 T garlic
5 baked potatoes, mashed with a fork
2 32 ounce cartons of chicken broth

For the garnishes
2 chopped scallions
Shredded Cheddar Cheese
Chopped crispy cooked bacon
Sour Cream

Saute the onions and garlic in the bacon  grease until the onions are translucent.  Add the potatoes and broth.  Simmer until the soup is thickened.  Serve with the garnishes you like.

Very filling.

National Sushi Day

It is national sushi day in Japan.

So we got some:
