Kidlet and I made this for Easter:

Rainbow Jello.  This was not hard, just time consuming. And truthfully, I do not like Jello.  But the kidlet loves it so she will gladly eat this.

Clementine Vodka

I think our family goes through a box of clementines a week.  So last week I had an idea:

Clementine VODKA.

I just put the whole peel in some cheap vodka we had.  I put the whole peel in for a trace of bitterness.

Yohboh made this:

Creamsicle Martini

2 oz clementine vodka
4 drops vanilla extract

Back of the Box Recipe

I was going to make stuffed shells with spinach.  But instead I made this:

Stuffed shells with meatballs.

It was a back of the box recipe.  Sometimes a back of the box recipe is good.   Really good.

Everyday Dinner

I love all fancy cooking shows and cookbooks.  I subscribe to a ton of foodie magazines (Has anyone seen Mario Batali's recipe for pizza dough?  It has white wine!  Must make ASAP!), and regularly get inspired by the fancy foods that are there.

But really, most nights you want to put something somewhat healthy, fast, and tasty in front of your family.   Also something that does not involve major washing up.   This dinner fit the bill.

It is lemon grilled chicken, spinach pasta tossed with garlic and Boursin and steamed broccoli and cauliflower.  The children did not eat the cauliflower.  Yohboh grilled the chicken, the pasta and veggies were cooked in the same pot.  Sometimes, I think we go out to dinner because I just do not want to clean up the kitchen.

Did I mention that yohboh is the best griller ever?

Baby Breakfast

When you have an almost 18 month old (Egads!  Where does the time go?), the feeding of the child takes up a bit of time.  Especially if the child wants to feed themselves.  So there are a lot of finger foods she eats.  This is a typical breakfast.

There is also oatmeal and yogurt involved but getting her to feed herself with a spoon really means the dog eats a lot of yogurt.  The dog will not eat oatmeal.  So I spoon feed her, the baby not the dog.

Her favorite part?  The Havarti cheese.

Raising another little gourmette.

Chicken Pot Pie with Mashed Potatoes

I am making chicken pot pie with mashed potatoes because they reheat better than the pot pie with the biscuit crust.

Ahhh, my solutions to first world problems.
